Bluefish

Bluefish are abundant in Bay and Ocean later in the season. Since they are plenty and you want to try a fresh Bluefish, just ask one of the fishermen (persons) for a fish, sometimes they are happy to share the bounty, especially later in the season when their freezers are already stuffed. If you don't have a boat you can also try to catch them off the Beach. Maybe you'll even observe a "Bluefish Run". Keep your ears open. Word of a "Run" travels fast.

Bluefish (broiled)
Yield: six Total Time: 30 minutes
6    Bluefish fillets
4    cloves garlic, chopped
4    tablespoons mayonnaise
1   
Lemon
1     Onion, diced
1/2  bunch parsley, chopped
      Tarragon leaves
      other fresh herbs
1. preheat oven to 350 degrees
2. rub fillets with chopped garlic and place on lightly greased baking dish skinside down. Lightly coat with mayo, lemon juice, pepper, diced onion, tarragon, fresh herbs of your liking. (Optional: you may add strips of cream cheese)
3. place in preheated oven for 7 to 12 minutes depending on thickness of fillet. Pour white wine over to moisten.
